Food For Thought/Moving in May - FLYing through Spain

Dear Friends,

We are working way around the word on our Virtual Moving Tour to make our new habit for May more fun! We are looking to add 15 minutes of movement to our daily routine this month. To make this more exciting we have a minute meter on www.flylady.net, you post your minutes that you have moved, those minutes are converted to a one mile. 15 minutes equals 1 mile! We have been to Italy, Greece, England, Germany, France, Spain, and more! Leanne, our nutritionist has joined in on the fun and is providing us wth fun facts and recipes along the tour! Enjoy!

Dear Friends,

When in Spain, do as the Spaniards do! Dinner is served, believe it or not, late in Spain, sometimes as late 11 PM! In between coming home from work and having dinner, it is not uncommon to snack a bit on tapas in wine bars before getting home.

Tapas are appetizers served on small plates in small portions. They can run the gamat from fish, cheese, vegetables, breadÉ depending on what the cook makes and what is regionally available. Here's a tapas recipe that I've adapted to be a little less oily, but still capture the essence of the dishÉenjoy!

Gambas al Ajillo
(Shrimp with Garlic)
Serves 6

3 tablespoons olive oil
6 cloves garlic, pressed
24 medium sized shrimp, peeled and deveined
1 small thinly sliced jalapeno, deseeded and deribbed
1 tablespoon extra virgin olive oil
1 tablespoon chopped Italian parsley

In a large heavy bottomed skillet, heat the oil over a medium high heat till hot. Add the garlic and pepper and cook for just a minute. Now add the shrimp (half a batch at a time to avoid steaming them). Cook for about 2-3 minutes or until they begin to turn pink. Keep moving them and turning them over to get them adequately cooked.

Divvy up and serve on little dishes, drizzling a small amount of extra virgin olive oil over the top, sprinkle the parsley and serve.
